Sparodic slow loading times

Hi All
New to the board so please be gentle.
I have a real problem that is frustrating both me and my client. We have a website built in joomla which functions perfectly for 99% of the time but at certain times during the day the site becomes very slow and unresponsive. This happens at various times and therefore there seems to be no pattern. Furthermore it only happens when one certain button is clicked (purchase products). The button in question loads the shopping cart area of the site. As mentioned 99% of the time this is quick but not always.
Does anyone have any ideas as to how we may be able to fix this or what may be causing the problem. The team who developed the cart (IXXO) have not been overly helpful.

Please if you have any advise post as we are at wits end. Also we are not overly confident with php so any detailed instructions would be very appreciated.
