JS Treemenu in conjunction with PHP

Hey guys,
I am new to this PHP forum. Hopefully you can answer my question.
First off, I have recently made a website with a tree menu with many variables, you can check it out here: http://www.met.sjsu.edu/~joros/
I plan to make the functionality of my website almost identical to this website: http://www.hprcc.unl.edu/maps/current/index.php
My problem is I dont know where to start in order to properly use PHP to display various images with respect to Variable and Region on my website. On the HPRCC website just posted, you can see that they create functionality to display a desired image when the user chooses time/variable. How is this done? I know cookies are involved but as I said, I dont know where to start.
Any example code would be appreciated.
I am not foreign to programming but I am foreign to PHP.
