I have a simple project - a website (portfolio) which lists certain accomplishments during my college career, which is required at the College I attend to graduate. Most students are doing paper portfolios, but I would like to do a web-based portfolio. I figured a CMS would make it easy to just upload the items for my portfolio (word documents), or simply add those items.

I have no problem adding the items, but would like to customize the way this Mambo page looks (I can install Joomla again if it's preferred). More specifically, change the logo, and customize the page to look more professional. I'm very open to ideas since this is a volunteer project.

Use Joomla. The templates are stored in the 'templates' directory and are essentially PHP/HTML templates and easy to change so long as you basic HTML/PHP.
