Wireless networking and packet sniffing

At work we get our high speed Internet via a wireless connections from our ISP. Most every machine on our internal network AKAIK is hard wired.

If the wireless connection is encrypted -- which I am sure it is -- it is not likely anyone would be capable of packet sniffing by sitting outside our building and intercepting the transmissions?

How does packet sniffing usually get done -- finding an insecure network uploading a packet sniffer and just watching traffic go by until something interesting happens?
