How to point domains to folders

I have a server that i manage myself (at my house). I also own 4 domains (open-server.org, myopenspace.net, open-blog.org, and swgalaxies.org). How would i point those domains to different directories on my server.
My server is a Windows 2000 base running Apache2Triad (Apache, MySQL, PHP, Perl, etc). My domains are managed through godaddy. Is it possible to setup a DNS server on your own computer, or are there DNS registration services that allow your domains to point to ip's with a /directoryname after it.
I havent ever fully understood domains and directories. Ive heard of virtual directories in IIS etc but i run Apache on a Windows 2000 Server server (sounds strange saying that).
So any help with advising me on how to point domains to the same server but different directories would be great.
