How to ensure credit for your work

OK, I've designed a number of websites for my current employer, and put my name in the meta tags.
If at some point I leave this company, I'm told they are unlikely to give references, so these sites are the only evidence I will have of my work here.
Is there any steps I can take to stop them changing the meta tags in that case?

no. But you generally have every right to make copies of your work for your portfolio.

Different question.
First time I wanted to know if it was legal to insert my name in, basically. Now I'm asking what can I do if my employer (or some git who comes after me) removes or changes the information I've now put in there?

No, as a work for hire, they own the content, and can do with it as they please after you leave.
However, your goal isn't to prevent the change. Its to validate your employment and activity on those pages.

It still has partial copies of
my old homepage, way back from 2002! (Yes, it used frames. I've grown, haven't I?)

WOW. I can't believe some of the crap I produced. Well I can. I mean, after all, I haven't always been as perfect as I am right now, but whoo, that was some bad stuff.

I KNOW! I'm honestly ashamed. Invalid code, frames, tag soup.. I even made it in Frontpage. Oh the shame of my youth. But hey, at least I can say I do better now.
