should i hire a team or no?
when i start getting big projects should i hire a team..? i recently got a project for a video show site and the job was a $3000 job but i had to pull out because i was overwhelmed with the deadline, that's not good for business in the long run if i have to keep canceling projects, the client was a friend so hes not going to give me a bad testimonial this time

You could always hire freelance people just for bigger projects. Or you could take on one new person and then between you build up to a new managable workload, then hire another when you want to go bigger. The possibilities are endless when it comes to having a lot of projects in the foreseeable future, its really up to you. If not just let people know how long its going to take quite honestly like you did. 'It'll take X weeks' often is better than 'It'll take x days' ... super fast estimates = no no, to much chance of a bodge job in my opinion.
Why not try some local freelancers? Ones you can actually meet? If you like them after, you may get a permenant team.

i live in indiana.. not many web developers live here ... my aunts a programmer but she dose java and C++ stuff

$3000 probably wouldn't be enough to employ a single developer let alone a team.
