We have a client who has a MacBook. They have issues getting to Sierra, so we want to be able to change their host settings for mail in Yosemite.
I cannot see how they do it.

What specifically are you looking to change? My initial thought is to open Mail, press CMD + , to open preferences, then go to the Accounts tab. I'm also using Sierra, but I don't recall it having changed all that much.

The issue is, my client is on Yosemite, not Sierra. He's having big issues upgrading, but needs to alter his host name for mail accounts.

This may or may not matter depending on what it is he's trying to accomplish.

This isn't entirely clear to me. Can you be more specific? Are we talking about changes to the Mail app for him to be able to retrieve his email or, since you're mentioning host name, does this have something to do with his running a mail server? I'll definitely need more details if I'm to be any help at all.

Let's say the SMTP/IMAP is host.ourdomain.com.
Because of some problems, we need to change that, but I Cannot see where to change it in Yosemite's Mail app.

Preferences > Accounts > Server Settings.
EDIT: It's apparently called 'Advanced' in Yosemite.

Great thanks.
On reading, it says you have to uncheck something, come out of it, and then go back in again. And that's where we were hitting a wall.
In the end, they have deleted the account and started over.
