I've had a look on php.net, but they don't give much of an indication as to how stable the releases are (unless i'm just looking the wrong place)
Is there a stable release of php5? Or am I better off using an older release?

all releases, outside of RC's are stable that I know of.

The ones they link to on the download page are stable. They only put them up on that page as when they're ready.
