iPod/iTunes questions

I have a new iPod, never had one before. It's an 8gB Nano. Because I'm an old guy it took me about 2 minutes to learn how to use it. (I think a pre-teen is born knowing how to, a teen learns in 5 seconds.) This is really cool technology.
Anyway, I loaded iTunes on my computer and am transferring music from CD's like crazy and I have a couple questions.
Is it better to let it do the full synchronization thing, or manage manually? So far the synch goes pretty fast, but what happens after I get a lot of music on there? Does it recopy the ones that are already there?
The bigger issue is that now both IE and Firefox are using Quicktime to play mpg/mpeg/avi files. How the heck do I get them to stop that and use Windows Media Player again. I went to the Quicktime and unchecked the box that says "have browser use Quicktime to play movie files" and I have Windows Media Player set in the Windows File Explorer "file types" tab for those three file types. The Firefox "file types" box under "downloads" is empty and I cannot find a way to add a file type to it.
Any help?
