Support Contracts

Just curious, but I have never worked for an OSS vendor before.
When companies sell support contracts for $400/year or whatever...what do those contracts usually stipulate exactly? If a enterprise purchases a contract are you usually expected to perform custom development or just be on call in case of emergencies or is it training or what?
