Best email server for CentOS 4?

I'm looking to move my business email to my dedicated server (away from Gmail) and am looking for a fairly simple solution... Every tutorial that I've looked at have been fairly hard to understand (I can install nearly anything just fine through linux) because you get the server installed (at least I think I did) but there is absolutely no discussion about user management or anything nearly related to it.

I'd like to be able to easily create users with passwords and a catchall to forward to one of the accounts that I've made. Can you guys help me with this or just point me in a good direction?

I agree, we used to use postfix all the time while using CentOs

Postfix for SMTP.
Courier for POP3/IMAP.
